What do diners use instead of “Matzoh meal” to make Matzoh balls?

Question by moviebuff411: What do diners use instead of “Matzoh meal” to make Matzoh balls?
When I go to a diner and order Matzoh Ball soup, they serve it with fluffy white matzoh balls that don’t seem to be made out of “matzoh meal”. There’s no way that they’re using “maztoh meal” because it’s too uniformly white. What do they use instead of matzoh meal to make it so white and soft?

Maybe they’re just using normal flour. However, proper matzo meal tastes and feels better.
