If it’s safe then why not. If it’s dangerous, shouldn’t civilians be informed?

did you mean aspartame?
if you did, it’s because aspartame bonds to blood cells, decreasing their oxygen carrying capabilities. While this isn’t a factor for most people, it can cause histotoxic hypoxia at high altitudes. This can lead to vision problems, poor decision making, or even lack of consciousness. Not good things for pilots.
