Am I seasoning my new wok properly?
Question by Tall Green Alien: Am I seasoning my new wok properly?
I cleaned the wok by boiling water in it and then scouring it with soapy water. Then I smeared canola oil all over the inside of the wok and applied medium heat for 15 minutes. (The directions said to use “cooking oil.”) The bottom of the wok turned black and the oil smoked. I figured I had cooked a layer of oil onto the bottom of the wok, so I took it off and recleaned the inside with soapy water and a steel wool scouring pad, as before. I couldn’t get all the black out, so I figured maybe that’s what’s supposed to happen (?). Then I started again but used lower heat. Nothing is smoking now, but I don’t know if it is really seasoning, because I’m not sure that I’m using enough heat, and I’m afraid to use more heat because maybe I’m just making a layer of burned canola oil. So, am I seasoning my wok or am I ruining my wok?
